Chicken, Tortillas, Cheese, Eggs: Three No-Drama Dinners

The fridge is not empty. It just hasn’t turned into a dinner idea yet.

If you have chicken, tortillas, cheese, avocado, and eggs, you already have a few useful directions. No special recipe hunt required. Pick the one that sounds easiest tonight and use what you have.

1. Chicken and cheese quesadillas

Put chopped cooked chicken and a little cheese on one half of a tortilla. Fold it over and warm it in a skillet until the cheese melts and the tortilla gets some color. Repeat with the rest.

Slice an avocado on top or on the side. Salsa, plain yogurt, or whatever sauce is already open can join in too. No sauce? They’re still dinner.

Easy switch: No cooked chicken ready? Make cheese quesadillas now and save the chicken for another night. If you’re starting with raw chicken, cook it through before adding it to the tortillas.

2. Egg-and-cheese tacos

Scramble a few eggs, add cheese while they’re warm, and tuck them into tortillas. Add avocado if you want something cool and creamy. Leftover chicken works here too, but it’s optional.

This is a good “I can’t deal with a recipe” dinner: one pan, familiar ingredients, and no need to make every taco identical.

Easy switch: Make one larger wrap instead of several tacos, or serve the eggs beside warmed tortillas and let everyone assemble their own.

3. Crispy chicken tortilla skillet

Cut or tear tortillas into bite-size pieces. Warm them in a skillet with chopped cooked chicken and a small splash of water or salsa, if you have some. Scatter cheese over the top, cover the pan, and let it warm until the cheese melts. Finish with avocado.

Think of it as a flexible skillet, not a strict recipe. Add an egg on the side if that’s what needs using, or skip anything you don’t feel like dealing with.

Make the call, not a whole plan

  • Want crisp and cheesy? Quesadillas.
  • Want the fewest moving parts? Egg tacos.
  • Want to use up tortillas and leftovers together? The skillet.

Chicken and eggs can make a meal feel more substantial, but portions and nutrition vary. These are simple dinner ideas, not precise nutrition calculations.
